Serves: 6 | Prep Time: 20m | Cook Time: 15m

Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 tsp mustard
- salt, to taste
- cayenne pepper, garnish
- food dye (optional)
- 2 tsp Habgoblin Hot Sauce: Fiery Habanero
Tools
- Small saucepan
- Medium bowl
- 2 Small bowls
- Knife
- Spoon
- Lazy Susan
Directions
- Cover eggs in 1 inch of cold water in a saucepan. Bring the water to a boil then reduce the heat to a simmer and let the eggs cook for 15 minutes.
- Drain eggs, carefully transfer to a medium bowl and cover with cold water and allow them to cool. (20 min)
- Once cooled, peel the shells and cut the eggs in half lengthwise. Carefully remove the yolks into a small mixing bowl, returning the intact egg whites to a plate. Mix in mayonnaise and mustard using only enough mayonnaise to blend together smoothly. Mix well.
- Transfer a small amount (2-3 Tbsp) of yolk mixture to additional mixing bowl, and add hot sauce to desired heat. **
- Spoon mixture(s) into waiting egg whites, dust with a light sprinkling of cayenne pepper and plate on a circular platter, or Lazy Susan.

HOT TIPS
**Note: Sauce may give yolk mixture a darker color. For more tension and mystery during the roulette experience, food dye is an easy way to thematically and uniformly color the yolk filling. Carefully add a drop of dye to each mixture to reach a more uniform color.
