Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp mustard
  • salt, to taste
  • cayenne pepper, garnish
  • food dye (optional)
  • 2 tsp Habgoblin Hot Sauce: Fiery Habanero

Tools

  • Small saucepan
  • Medium bowl
  • 2 Small bowls
  • Knife
  • Spoon
  • Lazy Susan

Directions

  1.  Cover eggs in 1 inch of cold water in a saucepan. Bring the water to a boil then reduce the heat to a simmer and let the eggs cook for 15 minutes.
  2.  Drain eggs, carefully transfer to a medium bowl and cover with cold water and allow them to cool. (20 min)
  3.  Once cooled, peel the shells and cut the eggs in half lengthwise. Carefully remove the yolks into a small mixing bowl, returning the intact egg whites to a plate. Mix in mayonnaise and mustard using only enough mayonnaise to blend together smoothly. Mix well.
  4. Transfer a small amount (2-3 Tbsp) of yolk mixture to additional mixing bowl, and add hot sauce to desired heat. **
  5. Spoon mixture(s) into waiting egg whites, dust with a light sprinkling of cayenne pepper and plate on a circular platter, or Lazy Susan.
Recommended Sauce: Fiery Habanero

HOT TIPS

**Note: Sauce may give yolk mixture a darker color. For more tension and mystery during the roulette experience, food dye is an easy way to thematically and uniformly color the yolk filling. Carefully add a drop of dye to each mixture to reach a more uniform color.
